It’s winter here in the midwest with temperatures getting close to zero.  When I’m wearing my hat in my house, it’s time to make some warming foods.
I start thinking of recipes loaded with warming spices such as ginger, garlic, chili peppers, cinnamon, cardamon, cumin, and cloves.   These spices will keep you toasty warm and help your immune system fend off viruses and bacteria.  Learn more about 7 herbs and spices that will warm you up.
Tonight’s dinner is Red Curry Chicken with Veggies and Organic Basmati Brown Rice:
Ingredients:
10 c water or chicken stock
3 -4 cups cooked chicken ( or other protein such as shrimp or tofu)
1 small onion chopped
4 minced garlic cloves
1 inch of ginger and 1 inch of turmeric paste (mashed with mortar and pestle )
2 stems of Thai Kitchen Lemon Grass
2 -3 Tbs Thai Kitched Red Curry Paste ( red chili pepper, garlic, lemon grass, galangal , kafir lime, shallot, spices)
2 cups of chopped bok choy, 1 medium diced sweet potato .  Use other types of vegetables of your choice.  
1 can Native Forest Organic Coconut Milk
Cooked organic basmati rice
Place the first 10 ingredients in a large pot.  Bring to boil and simmer for 30 minutes.  Add coconut milk and simmer for 15 min.  Serve over basmati rice.
