Granola Bliss Nuggets

Line a 24 count mini-muffin pan with wax paper liners, or line an 8x8 inch square baking pan with parchment paper.

Combine the oats, sunflower seeds, pumpkin seeds, and raisins in a large mixing bowl.

In a smaller bowl, stir the sunflower butter, maple syrup, vanilla, spices and salt into a paste. If the mixture is too thick, add a few teaspoons of hot water.

Add the sunflower butter mixture to the dry ingredients and stir well until completely mixed.

Fill the mini-muffin cups, or press the mixture firmly and evenly into the lined baking pan.

Refrigerate for 2 hours to set. Once the nuggets feel solid to the touch, they are ready to serve.

Store in an airtight container in the fridge for up to a week. To freeze, wrap individually and freeze for up to 2 months.
Note
- Kapha dosha: add 1/8 tsp dried ginger and increase the cinnamon and cardamom to 1/4 tsp each. Enjoy in moderation, as the other ingredients are heavy and mostly sweet.
- Low histamine: cinnamon can be higher in histamine, so omit it or use less. Replace vanilla extract with vanilla bean powder, use fresh seeds, and replace the raisins with freeze dried blueberries or apples.
