Pecans, and nuts in general, are a nice addition to our diet during the cooler winter months. Warming, grounding, and nutrient dense, pecans balance the cold, dry, mobile, and light qualities of vata dosha in our bodies and minds.

Candied Maple Pecans with Ayurvedic Sweet Spices
Description
Best for vata dosha; enjoy in smaller amounts for pitta or kapha.
Ingredients
Ayurvedic sweet spice blend*
Instructions

Line a cookie sheet with parchment paper and set aside.

Warm a medium sauté pan on low heat. Add the ghee and let it melt, then add the spice blend and sauté for a few seconds, making sure the spices do not burn.

Add the remaining ingredients and mix with a wooden spoon until the pecans are evenly coated and the spices have mostly dissolved into the maple syrup.

Cook on medium heat until the maple syrup comes to a low simmer, stirring occasionally. It should gently bubble, not boil vigorously. Reduce the heat as needed to maintain a low simmer.

Continue simmering for about 20-25 minutes, stirring every 2-5 minutes, until the liquid has evaporated and the sugars have crystallized.

When the maple syrup starts to crystallize, cook for 1 more minute, stirring every 10-20 seconds.

Immediately pour the pecans onto the parchment and use the wooden spoon to break apart clumps and spread them in an even layer.

Cool completely to room temperature. Enjoy, or store in an airtight container for up to 2 weeks.
