Ingredients

Instructions

  1. Grind the sunflower seeds in a blender or food processor until they become a fine powder. Add to a large mixing bowl.
  2. Add the cacao powder, coconut, cinnamon, cardamom, turmeric, ginger, ashwagandha (if using), and salt. Stir well until evenly blended.
  3. Add the maple syrup, sunflower butter, and ghee. Use clean hands to mix everything together, wetting your hands slightly so the mixture doesn't stick.
  4. Place the coconut for coating in a small bowl.
  5. With wet hands, roll small amounts of the mixture into balls in your palms and place on a plate.
  6. Roll each ball in the coconut until fully coated, then place in a container large enough for about 18 to 20 balls.
  7. Refrigerate for 1 to 2 hours to get them nice and solid before serving. In warm weather you may need to use the freezer.
  8. Store in an airtight container in the freezer for up to 3 months.

Note

  • You may replace the sunflower seeds with other nuts or seeds such as almonds, macadamia nuts, cashews, walnuts, hemp seeds, or flax seeds. Sunflower seed butter can be replaced with any nut or seed butter (except peanut butter). Try adding raisins, dates or cacao nibs.
