Kitchari is a well balanced, easily digested, complete food which provides all the nutrients one needs. I ate a mono-diet of kitchari during a palliation cleanse, a gentle purification process, with fresh vegetables and spices added to pacify kapha and vata dosha.
There are many kitchari recipes out there, but I'm enjoying this one. It's a hybrid of several other recipes.
Betty’s Palliation Cleanse Kitchari
Description
Pacifies kapha and vata dosha.
Ingredients
Rice, beans and vegetables
Spice mixture
Instructions

Place the rice, mung dal, vegetables, pumpkin seeds and water in a medium pot and bring to a brisk boil. Reduce heat to low and cover until the rice and mung dal have cooked completely, about 30-40 minutes.

In another pot, place the spice mixture ingredients in the order listed and simmer for 10 minutes.

When both have finished cooking, mix together. Serve warm.
Note
- During the cleanse I drank warm cardamom, cumin, fennel (CCF) tea and ginger tea all day to support digestion.
